Foods may not be what you think
In this modern North American society, even people who eat make very healthy choices may not acquire enough vitamins and minerals. Today’s plants contain less nutrients than they did 50 years ago. The soil where plants are raised are depleted of nutrients. In turn, what we eat is not as nutrient-dense as what we might have expected.
Furthermore, food processing depletes even more nutrients from foods. Every additional step of processing diminishes the nutritional value of food further. The food industry is producing many snack foods with no nutrients; you may feel full, but your body has not received any benefit. These “empty calories” are more prevalent than ever, and further harming our ability to reach an optimal state of health.
